Mom’s Pulled Pork

4-6 Pork Chops   Your Favorite BBQ Sauce

(I use F. McLintocks Original Recipe)

Score fat on the sides of the pork chops; then brown both sides in a small amount of oil (cover with a lid slightly off-center during the browning process.)  Pour 1 cup of your favorite barbecue sauce and ¼ – ½ cup of water over the chops.  Simmer covered, for about 1 hour.  Turn off heat and let stand 30 minutes.  Remove each chop from the pan, and using two forks, discard fat and shred pork, going with the grain of the meat.  Reheat shredded pork, using the sauce to moisten to your liking.  Serve over rice or on your favorite rolls, with additional sauce.
